Description
The Commercial Stainless-Steel Air-Cooled Blast Freezer provides a rapid freezing solution for restaurants, catering facilities, bakeries, butcheries and food-processing businesses. Unlike a conventional storage freezer, it circulates extremely cold air around the loaded products to remove heat more quickly. Its reference operating range of approximately −40°C to −50°C allows the cabinet to support demanding food-freezing processes. Rapid freezing can help reduce the formation of large ice crystals, supporting improved texture, appearance and moisture retention when products are subsequently defrosted. Products are arranged on compatible trays or shelves inside the reach-in cabinet. Space should be maintained between individual portions to allow cold air to circulate around each item. Overloading the cabinet or blocking the airflow outlets can increase freezing time and produce inconsistent results. The air-cooled refrigeration system removes heat without requiring a separate cooling-water connection. Adequate ventilation clearance must be provided around the condenser so that heat can be discharged efficiently into the installation area. Stainless-steel construction provides a durable commercial exterior and accessible internal surfaces for routine cleaning. The insulated reach-in door helps limit cold-air loss, while the temperature controller allows the operator to set and monitor the required cabinet temperature. The system uses R404A mixed refrigerant, which is commonly applied in low-temperature commercial refrigeration equipment. Installation, refrigerant charging and refrigeration-system repairs must be completed by an appropriately qualified technician. Actual freezing time depends on the initial product temperature, portion thickness, water and fat content, packaging, tray spacing, load weight and required final core temperature. Cabinet-air temperature should not be treated as the food’s core temperature. A calibrated food probe should be used to verify that the required internal temperature has been achieved. The machine is primarily intended for rapid batch freezing. Once products have reached their validated target core temperature, they should generally be transferred to suitable frozen-storage equipment unless the selected configuration is specifically approved for long-term holding.
