Description
The Commercial 2-in-1 Charcoal Broiler Grill Oven provides the intense heat and distinctive flavour of charcoal cooking within a controlled, enclosed commercial appliance. Combining direct grilling with oven-style roasting, it allows professional kitchens to prepare steaks, chicken, lamb, fish, seafood, vegetables and numerous other products using one versatile cooking station. Unlike an open charcoal grill, the enclosed cooking chamber retains heat around the food. This supports faster searing, improved heat recovery and more controlled roasting while helping reduce unnecessary heat loss during operation. Food can be exposed to intense charcoal heat for surface caramelisation while the closed chamber continues cooking the centre. The oven has a reference operating-temperature range of approximately 250°C to 350°C. These high temperatures make it particularly effective for searing steaks, browning meat, crisping poultry skin and producing visible grill marks. Actual operating temperature depends on the charcoal quantity, fuel quality, ignition stage, damper position, product load and frequency with which the door is opened. Upper and lower airflow dampers allow the operator to regulate combustion intensity. Opening the dampers increases airflow to the charcoal, producing a stronger fire and higher cooking temperature. Restricting the airflow reduces the intensity of the embers and supports slower, more controlled cooking. An integrated door thermometer provides a convenient indication of the temperature inside the cooking chamber. Operators should use this reading together with established cooking procedures and a calibrated food probe. The door thermometer indicates chamber conditions and does not confirm the internal temperature of the food. Two cooking racks provide flexibility for different products and batch sizes. Rack positions can be selected according to the required distance from the charcoal bed and the preferred cooking intensity. Food positioned closer to the heat receives stronger direct exposure, while higher positions can support gentler roasting or finishing. A warming rack located above the primary cooking area provides a reference holding temperature of approximately 45°C under suitable operating conditions. It can be used for temporarily resting or holding compatible cooked products before service. It should not be treated as a regulated hot-holding cabinet unless the actual food temperature is monitored and maintained according to applicable food-safety requirements. The spring-assisted door mechanism makes the heavy oven door easier to open and close during service. This helps operators load and inspect food while limiting the amount of time the cooking chamber remains open. Keeping the door closed as much as possible improves temperature stability and reduces unnecessary charcoal consumption. An enclosed ash drawer collects residue from the charcoal bed, while a separate grease collector helps manage fat and cooking liquid released from food. These removable components support a cleaner cooking area and simplify routine maintenance. Both should be checked and emptied regularly after the appliance has cooled completely. The housing and interior are manufactured from stainless steel, providing the durability required for professional food-service environments. Stainless-steel surfaces also simplify routine cleaning, although food residue, grease and corrosive deposits should not be allowed to accumulate. Two principal oven sizes are associated with this product range. The compact configuration measures approximately 622 × 735 × 1,256 mm and has a listed net weight of approximately 212 kg. The wider configuration measures approximately 902 × 735 × 1,348 mm and weighs approximately 219 kg. An alternative published specification lists slightly different depth measurements of approximately 660 mm for the compact version and 670 mm for the wider version. Final dimensions must therefore be confirmed against the selected production drawing before installation arrangements are completed. An optional stainless-steel cabinet is available for supporting the oven and providing a coordinated floor-standing installation. The reference cabinet measures approximately 614 × 603 × 600 mm. Whether the cabinet includes internal shelving, doors, levelling feet or additional storage accessories must be confirmed for the ordered configuration. This appliance is powered entirely by charcoal and does not require an electrical connection for its basic cooking operation. It does not include automatic ignition, powered convection, digital temperature control or programmable cooking cycles. Charcoal loading, ignition, airflow adjustment, food handling and temperature monitoring remain manual operations. Charcoal cooking produces heat, smoke and carbon monoxide. The oven must only be installed in an approved, well-ventilated commercial cooking environment beneath a correctly designed extraction canopy. The exhaust system, chimney connection, fire protection, clearances and fresh-air supply must comply with the applicable installation requirements. The oven must never be operated in an enclosed area without adequate mechanical extraction. Operators should also keep suitable fire-control equipment nearby and follow an approved procedure for lighting charcoal, controlling flare-ups, removing ash and shutting the appliance down. Only appropriate food-grade lump charcoal or another fuel approved by the equipment supplier should be used. Accelerants, petrol, solvents and other volatile ignition liquids must never be placed inside the cooking chamber. When service is complete, the airflow should be restricted according to the shutdown procedure and the charcoal allowed to extinguish safely. Ash may retain heat for many hours and must not be transferred to combustible refuse containers until it is completely cold. With high-temperature performance, two cooking racks, manual airflow control and optional cabinet installation, this charcoal broiler oven offers a powerful cooking solution for restaurants and professional kitchens seeking authentic charcoal flavour and versatile grill-and-roast preparation.
